Red White and Blue Fruit Popsicles

Happy 4th of July! I hope everyone is having a wonderful holiday weekend, whatever you might be doing 🙂

In the spirit of Independence Day, I wanted to share something red, white and blue. I was hoping to post a festive potato salad with blue/purple potatoes but I have been to three stores without any luck…maybe next year 🙂 Instead, I have an incredibly simple and light treat for you today that is purely fruit sweetened and perfect for a hot July day.

These fruit popsicles are both guilt-free and a cinch to throw together! I have already consumed two today without thinking twice, as I am getting my daily recommended servings of fruit – how can that be a bad thing?

Red, White and Blue Fruit Popsicles 

Ingredients

1 cup green seedless grapes, washed thoroughly
1 1/2 cups white grape juice
1/3 cup chopped strawberries
1/4 cup blueberries

Directions

1. In a blender, combine grapes and grape juice and blend for 30 seconds or until well mixed. Set aside.
2. Using six popsicles molds (or paper cups), evenly divide blueberries and add to each mold. Divide chopped strawberries evenly and sprinkle on top of blueberries.
3. Pour blended grape mixture into molds evenly. Insert popsicle sticks into each mold and freeze until solid (mine took about 4 hours).
4. When ready to enjoy,  remove from freezer and let sit at room temperature for 5 minutes before removing from molds or peel off paper cups if using. Enjoy!
